I've been subscribed to Entireweb's newsletter for a while now and picked up a lot about SEO http://www.entireweb.com/newsletter/ It seems mainly that good design - cutting back on JS, frames, images-instead-of-text, use of heading a paragraph tags, writing efficient html - is what will be good for your site rating. There are lots of tricks and cheats, but they tend to get found out. And remember, I never use a search engine to find my "staple" sites - I found out about Google, Freecycle and Gumtree from friends, not search engines! A memorable name and a good site and good service is better than being in the top ten but not getting any custom.
