Matt,

Dopus [1] is a docbook chain which works out of the box without any fiddling.
You could add in one of the "simple plain text" to docbook thingies
(markdown? or ReStructuredText or something) if all you need is
sections / titles / and the like (ie, no code markup, etc)

You'd have text -. pdf without too much hassle, via fo/FOP.
