[_] email subject line encoding £ sign

I'm writing copy for an email which is sent by a server side script.
The subject line is 'win £100' but it arrives to Apple Mail as 'win
X100'. Works fine in the body.
Any suggestions - is there some character set voodoo I need to
learn? Or am I reduced to 'win one hundred pounds'?
